Fabulous Fall: Pumpkin Bread

Barely a few days into September and I already felt the need to bundle up in cozy blankets, break out the cozy tea mugs and of course make a batch of pumpkin bread. It’s a recipe from my mother in law that I first tried shortly after my husband I got married back in 2013. And now it’s how I kick off the fall season pretty much every year since. It is so moist and has the perfect amount of spice, to make this you will need:

  • 3 cups of flour (sifted)
  • 3 cups of sugar
  • 3 tsp baking soda
  • 2/3 cup oil (I used coconut oil but any type really works)
  • 1/2 tsp salt
  • 4 eggs
  • 1 cup water
  • 1 tsp nutmeg
  • 1 tsp ground cloves
  • 1 tsp cinnamon
  • 1 15oz can pumpkin

 

Combine all ingredients in a bowl and mix until the batter is smooth. Pour into loaf pan about halfway. Β Bake at 350 degrees Fahrenheit for 1 hour when using a regular size loaf pan or 40 min for a small loaf pan.

I used the small pans and it made about 7 loaves.
